I made some yummy things today! This morning, I felt like cooking something so I steamed some broccoli and added potatoes, onions, and some good seasoning.

Ingredients added:
  • garlic powder, lite salt, pepper, mixed herbs seasoning
  • little bit of chicken stock
All on a couple leaves of lettuce! Added a fried egg, about a tablespoon of pork emputido, and some sriracha sauce. The veggies were delightful :)





Then, for an afternoon snack, I made peanut butter and banana pancakes WITHOUT the fatty flour! Thanks to The 10 Cent Diet for an unbelievably easy yet tasty recipe. Her recipe actually says to use 2 bananas, but I only had one haha. Tasted great still :) These were so fun to make. Sadly, the ones I made were a bit unhealthy just because I didn't have organic peanut butter.

For dinner, I didn't get to shoot a picture. I don't know what to call it either. I kind of cooked something for the family off the top of my head. While marinating the chicken, mom came home and asked, "What are you cooking?" I said I didn't know. ;) But the result was amazing. And it's probably bad that I only cook things to "taste" instead of exact measurements. It's just not my thing, sorry! Anyway here were the ingredients for the marinade of the chicken:
  • Soy sauce
  • Garlic powder
  • Garlic salt
  • Pepper
  • Some sugar and brown sugar (not too much)
Once chicken is done (process may very for you since I used chicken thighs and drumsticks), add potatoes, onion, garlic and achuete. Although, next time I won't add as much achuete. I added about almost half a teaspoon, which resulted in it tasting a little too similar to other dishes that use it. Even before the achuete, the chicken tasted amazing! And if you're wondering what oil I use, it's all about Extra Virgin! Except for the pancakes, I used Veggie Oil like it said, but I honestly don't even know the difference :( Bye!

PS - Livestrong.com's MyPlate is so fun, and it is definitely helping me watch what I eat. I recommend any one to try it out!



This was my breakfast yesterday.

  • 1 egg + 1 egg white scrambled w/ baby spinach and chopped cauliflower
  • 1 slice of whole wheat bread
  • 1/4 cup of blueberries
You can't see the cauliflower, but I promise it's mixed in there! I've been making an effort to replace rice with cauliflower, so expect to see a lot of that in my meals. Also, if you look up cauliflower rice or cauliflower faux rice, you will see what I'm talking about. Actually, it's in my next photo..



For lunch!
  • 1/2 of a medium banana
  • Stir-fry teriyaki chicken w/ asparagus and mushrooms
  • 3/4 cup cauliflower rice
The teriyaki dish was something I made for the first time. It turned out well, but I should have marinated it longer. My dinner pretty much consisted of the same thing, except with less cauliflower and on a bed of baby spinach. It tasted so much better!! I am a bit of a sucker for baby spinach, but at least it's a good thing. I actually took a picture of it, but I may just post it the next time I blog because it's still in my camera.

As of my meals from today, mostly the same thing! I don't have too much of a variety right now, just been grocery shopping for what we could afford. This whole week or the past two weeks, I've been cooking things for the first time. Meaning the dishes I cooked were first timers! If that made sense. :( There was spaghetti (yup) w/ground turkey, curry chicken, and sopas (google it!) with spaghetti noodles and Vienna chicken sausage which was freakin' delicious. Anyway, hope this was pretty cool for my first food post! I wish my food looked super duper pretty, but who cares it tasted wonderful.
